There are 77 pounds of haggis that I have just picked up from Peter Black & Sons at Park Royal South in West Vancouver.  I will deliver them to Floata Restaurant tonight, enroute to my appearance to “Address the Haggis” at the Burns Supper for the Vancouver & District Labour Council.

Many people outside of Scotland revile the poor wee haggis.  It is the butt of many jokes.  While in Scotland, I visited the Kelvingrove Museum and even found a display of a “wild haggis.”  (see the picture above).  There was an accompanying sign that read: 

Some believe the haggis is a small creature with shorter legs on one side of its body, so it can run around the hills more easily. To most people, haggis is a delicious Scottish food, best served with “neeps and tatties” turnips and potatoes.

A “ceremonial haggis” should be “as lang's my arm” in length.  It is also called a “piper's haggis”, because it is piped in at dinners on a large serving plate for everyone to see.

Dim Sum can be translated as “pieces of the heart”
or “touch the heart” or “pieces of heaven.”  These are small portions
of food that are succulent and delicious.  But what happens when you
add haggis to this little heavenly morsels?  Will haggis, one of the
world's most celebrated and reviled foods ascend to the celestial
kingdom?

But you cannot give a proper “Address to A Haggis” if it's already cut up into little wee piece.

Traditional
Scots still like to see a traditional haggis at a Burns Dinner.  We
serve a one pounder of haggis to each table.  It might be not enough
for 10 Scots guests – but it is more than enough for 10 non-Scottish
diners.  To solve the problem we encourage people to share.

We
also serve a 7 pound banquet haggis that is “as lang's my arm” to our
head table.  This ensures that it is pretty in pictures… as well as
extra leftovers for any of our guests.

Now
imagine layering a little bit of haggis with Chinese plum sauce, adding
crispy noodles, finely diced vegetables and Chinese water chestnuts,
and serving on a delicate leaf of lettuce.  This is our Gung Haggis
lettuce wrap, a cultural and culinalry fusion twist. But people say
they have never seen people eat so much haggis, or eat haggis so
quickly!

And what does our traditional haggis maker think of all this?

In
2006, we were paid a high compliment when haggis rancher Peter Black
attended the Gung Haggis Fat Choy dinner with his family!  Peter loved
what we had done with his haggis.

Peter's haggis is a family secret with extra spices.  It is different
from a traditional lard recipe – which I have occasionally gagged on. 
I describe a Peter Black haggis to be like a nice liver pate, suitable
for serving with crackers at your next Super Bowl party.

Be sure
to visit Peter Black & Sons at Park Royal South – because there is
an annual display of “live wild haggis.”  Often the haggis is sleeping,
and you have to be very careful not to disturb it – but if you're
quiet, you can sneak up on it.

What is being served at the Gung Haggis Fat Choy Robbie Burns Chinese New Year's Eve Dinner to welcome the Year of the Tiger and Rabbie Burns' 151st Birthday?

The haggis is ordered from Peter Black & Sons @ Park Royal.  Next up is the secret taste-testing dinner which is essential to the
planning of the Gung Haggis Fat Choy dinner.  We we want to make
sure the food selection is right.  And it is also a wonderful way to introduce
the performers to each other, as we combine our talents and creativity to try out new ideas.  I remember many rehearsal taste-test dinners when the performers brought out their musical instruments and started playing.

Each
year we re-adjust the menu for the Gung Haggis Fat Choy dinner.  We try
to find new ways to eat haggis, and new dishes to introduce to people
not familiar with Chinese food. 


For
2010, I am adding two of my favorite dishes that haven't been featured before.  People have enjoyed having
deep-fried haggis won ton for the past few years, done both Cantonese and Shanhai styles.  We have served up haggis-stuffed pork dumplings (su-mei) and shrimp dumplings (shrimp dumplings).  When I created the first deep-fried haggis won-ton in 2003, it was a gift to welcome CBC radio host Shelagh Rogers and her Sounds Like Canada crew to Vancouver. The gift was all about food and family connections, which included: Pan-fried Turnip cake (Lo-Bak-Goh) that my great-grandmother used to make for me, Apple tarts like those my father would bring home from Chinatown, and for our future generations we created the now legendary deep-fried haggis wonton. “Neeps and Tatties” always accompany traditional Burns dinners – so this year the “neeps” will be found in pan fried turnip cakes, which are usually found at dim sum luncheons.


The
other new dish will be Pan-fried spicy salted prawns (Jew-Yim-Hah).  It is one of my favorite dishes and is served shell on.  Past dinners have found that while people liked the ginger crab, cracking the shell is kind of challenging and messy.  With the spicy salted prawns, you can just chew through the shell for more taste and roughage.  That's what I do!

2009 Year of Gung Haggis Fat Choy from Royal BC Museum in Victoria to Scottish Parliament in Edinburgh

2009 was an amazing year for Todd Wong and Gung Haggis Fat Choy

2009 opened with a life-size picture of Todd Wong included in “The
Party” exhibit at Royal BC Museum, and by November 30th – Todd was
encountering a life-size picture of himself at Scottish Parliament in
Edinburgh for the exhibit This is Who We Are: Scots in Canada.

It was an exciting year for the Joy Kogawa House Society, as the long sought dream of a writer-in-residence program became a reality.  Montreal Arab-Canadian author John Asfour became the inaugural writer-in-residence and helped writers at Kogawa House as well as hosted events at the house, Vancouver Public Library's Central and Carnegie branches.  By Christmas time author Joy Kogawa was enjoying her first Christmas season living in the house (temporarily) since she and her family had been forced to move in 1942 when they were sent to Internment Camps during WW2.

On November 28th, I set foot in Scotland for my first time ever.  Since first wearing a kilt in 1993 for the SFU Robert Burns ceremonies and hosting the Gung Haggis Fat Choy Robbie Burns Chinese New Year Dinner since 1998, I no longer have to say that I've never visited Scotland before.  It was a short but exciting trip as I attended the closing night reception at Scottish Parliament for the exhibit This Is Who We Are: Scots in Canada – co-hosted by the Scottish First Minster and Presiding Officer.  I also visited Edinburgh Castle and many things Robbie Burns, as I made my way to Alloway in Ayrshire to visit the birthplace of Robert Burns at Burns Cottage.  It had only just re-opened to the public and I had a special tour by manager of the Burns National Heritage Park.

This is a review of some my my favorite stories and events from 2009.

The origins of the dinner started with 16 people in a living room in 1998.  The next year it expanded to 40 people in a restaurant.  Soon it outgrew the first restaurant and expanded to 220 people in 2002.  Moving to a larger restaurant for 2003, and expanding to a 2-night event in 2004, serving over 500 people.  2005 saw the move to North America's largest Chinese restaurant and present home of the dinner where 570 people were accomodated.

A 2004 CBC telelevision performance special, Gung Haggis Fat Choy, was inspired by the dinner, and received two Leo nominations for best music performance, and best director of music performance.  In 2007, a CBC television documentary Generations: The Chan Legacy featured interviews with dinner creator Todd Wong, and film clips of the dinner.

A wide range of musical performers have been featured over the years including: fusion musicians Silk Road Music Ensemble, Dragon River Chinese Music Ensemble, Blackthorn celtic band, The Mad Celts, Chinese erhu master Ji-Rong Huang; opera singers Heather Pawsey, Veera Devi Khare; Jazz singer Leora Cashe.  Featured poets have included: Joy Kogawa, Rita Wong, Fred Wah, George McWhirter, Fiona Tin Wei Lam, Jim Wong-Chu, Sean Gunn and Tommy Tao.  The past 3 years have also featured sneak previews of Asian Canadian plays including: Mixie and the Half-Breeds, The Quickie, and Twisting Fortunes.

Todd Wong visits Scotland for Homecoming Year, the 250th Anniversary of the birth of Scottish poet Robert Burns.

For the 2010 dinner, creator Todd Wong has just returned from Scotland after visiting the birthplace of Scotland poet Robert Burns, and researching the displays of Burns for Homecoming Scotland, and museum exhibits on Scottish history and emmigration to Canada.  Wong is active in Chinese Canadian activities and visited Bejing and Xian in 1993.  He hopes to combine a merger of Scottish-Canadian and Chinese-Canadian history and culture in the Gung Haggis Fat Choy Robbie Burns Chinese New Year Dinner.

Another extravaganza of culinary and cultural fusion are expected for the 2010 dinner.  Details will be released each week leading up to the event.  Special guest speakers, media hosts, poets and musicians are confirmed or being confirmed.  The 2010 dinner will feature old traditions and new surprises, something borrowed and something brewed – especially created for the 2010 Gung Haggis Fat Choy Robbie Burns Dinner.

Haggis Fat Choy” bucks the trend of “Scottish Discursive Unconscious.” 

She writes: “In his contribution to the recent volume on
Transatlantic Scots
, Colin McArthur comments on what he calls
the “Scottish Discursive Unconscious,” a restricted range of “images, tones, rhetorical tropes, and ideological
tendencies, often within utterances promulgated decades (sometimes even a century or more) apart”…

“Vancouver, British Columbia, serves as a good test case for McArthur's comments. Like so many Canadian cities,
it has been home over the years to a large population of Scottish immigrants….
 
“There are indeed traces of the Scottish Discursive Unconscious at work in Vancouver….

“Gung Haggis Fat Choy takes many of the features of traditional Burns nights and gives them a non-traditional twist…The “Address to the Haggis” morphs into the “Rap to the Haggis,” featuring Joe MacDonald and Todd Wong with a
synthesized beat maker in the background. The “Toast to the Lassies” in 2009 was a rap-poem delivered by a
lassie with an all-male chorus. In addition, Asian elements are added, such as a “bamboo clappertale” about Robert

Where traditional Burns suppers of today include very little poetry, apart from snippets of the bard's most
famous works, Gung Haggis Fat Choy keeps the spirit of Burns's creativity alive by featuring readings from
Asian-Canadian poets and donating money to the Asian Canadian Writers' Workshop, Ricepaper magazine and the
Joy Kogawa House. Kogawa was one of the first Asian-Canadian writers to reach a national popular audience
with her 1981 novel Obasan.

Tartan Day and Scotland Week celebrated by SFU's Centre for Scottish Studies with Michael Russell, Scottish Parliamentary Minister for Culture!

April 6th is Tartan Day the whole world over.  And now there is Scottish Week.

The Centre for Scottish Studies, at Simon Fraser University, organized a conference on “Robert Burns in Transatlantic Context.”  I was invited by Dr. Leith Davis to perform on the Tuesday evening, and give a presentation on Wednesday afternoon, and attend the closing reception on Thursday evening.

Tartan Week in Vancouver was also the final stop for Scottish Parliamentary Minister of Culture, Michael Russell, who started his week at the Tartan Day parade in New York City, visited Toronto, Vancouver, Victoria, then Vancouver again.

This year the major events were organized by Dr. Leith Davis, director of the Centre for Scottish Studies, SFU.

The week started out with a Tuesday evening of music and song for the “Musical Celebration of Burns in North America,” featuring Jon Bartlett and Rika Reubsaat, performing “Burns Songs in BC”, and also Kirsteen McCue and pianist David Hamilton performing Burns Songs by Serge Hovey.  This was really interesting because Kirsteen is from Scotland, and she explained that these were the musical arrangements that Burns himself had used, but were only discovered a few years ago.

The third set of the evening featured Gung Haggis Fat Choy performers.  After a poem by visiting Scottish professor Dr. Robert Crawford, Dr. Jan Walls explained about Chinese clapper songs.  Jan is former director of International Communication at SFU, and also a former cultural attache for the Canadian embassy in Beijing.  At this year's Gung Haggis Fat Choy dinner, Jan performed a song about Robbie Burns to chinese clappers.  Leith was knocked out by Jan's performance.  This evening Jan performed the Burns poem “John Barleycorn.”

Leith's idea was to introduce all the travelling Burns scholars and conference attendees to a little bit of Gung Haggis Fat Choy.  She told them all that it was the “best Burns dinner” she has been to.  And she was amazed at how the Gung Haggis event incorporated and promoted cultural fusion.

Leith asked for a performance of “The Haggis Rap” or “Rap To A Haggis”, in which bagpiper Joe McDonald and I rap the immortal Burns poem, “Address to a Haggis.”  I introduced it by saying that Joe and I had performed this on CBC national television, and our MP3 version had also been played on BBC Radio Scotland two years ago.  Meanwhile, Joe had found a haggis in the kitchen.  Gung Haggis dragon boater Debbie Poon followed Joe into the hall carrying the haggis.

We closed off the evening by leading a singalong of Auld Lang Syne with the first verse and chorus in Mandarin Chinese.  Then dragon boaters Steven Wong and Debbie Poon helped lead some “volunteers” in a Chinese dragon parade, complete with two children carrying the Chinese lion masks.  It was fun, and lots of people thanked us afterwards with positive compliments.

On Wednesday there was a Community Research Forum on “Burns In BC.”

Jon Bartlett and Rika Reubsaat started the forum by talking about the history of Burns dinners in BC.  They were followed by Robert Barr who gave a history of the Vancouver Burns Club.  I followed with a history of Gung Haggis Fat Choy, its origins and its cultural fusion context.

I explained that BC is a young province.  While we are celebrating the 250th Anniversary of Robert Burns' birth, we only just celebrated the 150th anniversary of the colony of BC.  Vancouver is only 123 years old.  I explained that to me, the “Two Solitudes” of BC are the Scottish and Chinese.  Each arrived from an opposite direction, and lived in conflict.  I explained that if the Scots hadn't been in political power, there probably wouldn't have been a Chinese Head Tax or an Exclusion Act to keep the Chinese out of Canada.  To which many people applauded my statement.  I went on to say that many generations later, there are many Scots and Chinese intermarried, and sharing Scots and Chinese DNA, just like in my family.

I shared how I first wore a kilt for the 1993 Burns ceremony at Simon Fraser University, and how the Gung Haggis Fat Choy dinners grew from 16 people in 1998 to 550 people in 2009.  A CBC television performance special was aired in 2004 and 2005.   And with the SFU Recreation Department, I helped create the SFU Gung Haggis Fat Choy Festival in 2005 with dragon cart races, and later with the human curling event.  It was a good talk that also included how I was chosent to play Robert Burns for the Celticfest's inaugural “Battle of the Bards” which I won against actors playing Dylan Thomas and W.B. Yeats.

Making Burns relevant in a global 21st Century, is what Gung Haggis Fat Choy events do.  The growth of copycat dinners in Ottawa, the Yukon, Seattle and Santa Barbara, demonstrate that Gung Haggis is reaching people in a positive way.  While promoting Burns, it also addresses multiculturalism and racism.

Thursday's Scottish Week finale is a reception for Michael Russell, Scottish Member of Parliament.

Jason Kenney is the federal minister of citizenship, immigration and multiculturalism.  He presided over the Chinese Canadian Head Tax redress, that resulted in Prime Minister Stephen Harper giving a parliamentary apology for a racist tax but only gave an ex-gratia payments that recognized less than 1% of head tax certificates, because it was limited to only surviving head tax payers and spouses… most have long since died since Margaret Mitchell first brought up the the issue of Head Tax Redress in the Canadian Parliament back in 1984.

Recently, Jason Kenney waded into the discussion about Canadian identity, and immigration language classes, when he talked with editors at the Calgary Herald:

New Canadians, says Kenney, “have a duty to integrate.” Further, he
says, “We don't need the state to promote diversity. It is a natural
part of our civil society.”

To that end, the government has
sensibly ceased funding programs such as heritage language classes. Why
should the federal government pay for children to learn the language of
the country their parents and grandparents come from? It's the family's
responsibility to teach children about their heritage, including the
language.

Today, the same story appeared in the Vancouver Sun on April 1st, with a new title:

But this time, it appeared with a picture of Todd Wong aka “Toddish McWong” with the caption:

Now, that's heritage: 'Toddish McWong' combines Robert Burns Night and Chinese New Year.

I have to be flattered that my picture has appeared in the news media. 

But while the original story never mentioned “Toddish McWong” or “Gung Haggis Fat Choy,” a picture of Wong is used mainly to capture the reader's attention and draw them to the article. 

But I am a bit confused as to what the picture is meant to represent?

Is it because:

1  “Being Canadian means being everything to everyone who comes to our shores?”

2 – “People want to define Canada by how many politically correct contations this country can do to accomodate others?”

3 – “New Canadians have a duty to integrate,” says Kenney. “We don't need the state to promote diversity.  It is a natural part of our ciivl society.”

The article, by Naomi Lakritz of the Calgary Herald, goes on to share Kenney's views that: “the government has sensibly ceased funding programs such as heritage language classes [other than english or french].” 

“I think it's really neat that a fifth generation Ukrainian Canadian can speak Ukrainian… but pay for it yourself,” Kenney says.  Kenney's right… it is neat.  If you can speak your family's mother tongue, your life is just that much more enriched.  But such immersion in heritage shouldn't come at the expense of you identifying yourself as a Canadian first… and it certainly shouldn't come at Canadian taxpayer's expense.”

The article also goes on to give an example of how Kenney says that a grant for language training to the Canadian Arab Federation will not be renewed: “The government should support moderate mainstream voices, not people on the fringe.” 

The Gung Haggis Fat Choy events that I have created since 1998 have never received any federal grant money. 

I am a fifth generation Chinese Canadian that speaks better French than Chinese. 

I am a descendant of Chinese head tax payers.

I have travelled to Oak Bay in Nova Scotia, walked the Plains of Abraham in Quebec, stood on Point Pelee in Ontario, skiied in Banff Alberta, visited totem poles in Haida Gwaii, and even stood on the corner of Portage and Main in Winnipeg during windchilled Winter. 

I have been the guest speaker at a Terry Fox Run in Beijing, China.

By creating Gung Haggis Fat Choy events, my aim is to recognize both the pioneer histories of Chinese Canadians and Scottish Canadians, as well as the future of Canadians born with these shared ancestries.

I believe that culture evolves, and is not stagnant.

I believe that all Canadians should read “How to Be a Canadian” by Will Ferguson and his brother Ian Ferguson.

If it is a Canadian value to laugh, make fun of ourselves and not take ourselves too seriously, then maybe this book should also be mandatory reading when all new immigrants apply to become Canadian citizens, along with learning English or French.

And that's what Gung Haggis Fat Choy also encourages us to do… laugh and make fun of ourselves, by flipping stereotypes of Scottish and Chinese tradional customs into juxtapositions of cultural fusion.

It was 5pm at Ocean City Restaurant in Seattle's International District, the day after Valentine's Day.  Where were you?  Todd Wong, Joe McDonald and Deb Martin, were still driving to Seattle after a 2 hour delay at the US Border.  They arrived about 6pm, as the Kenmore & District Pipe Band has just followed David Leong's Bellwon Martial Arts Lion dancers.

Bill McFadden, producer of Gung Haggis Fat Choy III in Seattle, set up a program that really featured Seattle's youth, by featuring the Melody Chinese dance Group, Karen Shelton Highland Dancers, and the Asian Youth Orchestra.

After Emily's performance drew standing ovations, Todd Wong exclaimed “That song's not Chinese!” as Emily smiled.  “That song was Czardas, a Romanian song… I play that on my accordion.  What a wonderful display of technique by Emily!”

Encounters work with dj Timothy Wisdom, singing opera arias to hip hop
beats.  As well, she sang the classic Chinese folk song Mo Li Hua
(Jasmine Flower) in mandarin, accompanied by cultural fusion ensemble
Silk Road Music.

Canadian music celebrating the mystery and romance of the rails, “hits

gracious Glacier Dome car, and luxurious, bi-level GoldLeaf Dome Coach
affording a spectacular view of downtown Vancouver by night) with
critically acclaimed musicians Ariel Barnes, cello; Kathryn Cernauskas,
flute; AK Coope, clarinet; and Heather Pawsey, soprano for short,
intimate “mini-concerts”, and then move into the renovated vintage
station itself to join pianist Rachel Kiyo Iwaasa for a full ensemble

acclaimed musicians Ariel Barnes, cello; Kathryn Cernauskas, flute; AK
Coope, clarinet; Rachel Kiyo Iwaasa, piano; and Heather Pawsey, soprano

contemporary music.  Collectively, they have premiered hundreds of new
Canadian works, many written specifically for them, with performances

The Rocky
Mountaineer Station is located at 1755 Cottrell Street, Vancouver (east
on Terminal Avenue, south on Cottrell Street, located beside the Home
Depot) and parking is available.  The vintage station is a renovated
mid-1950s Canadian National Railways locomotive maintenance building
with exposed timber and brick, 35 foot vaulted ceilings, and a
full-length glass wall that provides a complete view of the track and
rolling stock.
 
SOUND-TRACKS is part of the Canadian Music
Centre’s “New Music in New Places” initiative to take Canadian music
out of concert halls and in to alternative venues, and is made possible
through the generous support and assistance of Rocky Mountaineer
